Description: Yesterday I had such a huge craving for chocolate that I dug through my desk at work for about 5 minutes, only coming out of it with a cough drop. *sigh* That just didn't cure the craving, y'know? So I went home and looked up some chocolate recipes. I decided on this one and am glad I did! I love biscotti but HATE the "tear up the inside of your mouth" quality of it. So, making my own, I was able to make it not quite so teeth-cracking. And I can fairly well guarantee this will cure any chocolate craving out there!
Ingredients: 1/2 cup butter, softened 2/3 cup sugar 1/4 cup unsweetened cocoa powder 2 teaspoons baking powder 2 eggs 1 3/4 cups all-purpose flour 3/4 cup white baking pieces 1/2 cup large semisweet chocolate pieces
Directions: 1. Preheat oven to 375ºF. Lightly grease a cookie sheet. Beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, cocoa powder and baking powder. Beat until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Stir in white baking pieces and chocolate pieces.
2. Divide dough in half; shape into two 9-inch-long loaves. Place loaves on prepared cookie sheet; flatten slightly until about 2 inches wide.
3. Bake for 20-25 minutes or until a wooden toothpick inserted near centers comes out clean. Cool on cookie sheet for 1 hour. (For easier slicing, wrap cooled loaves in plastic wrap and let stand overnight at room temperature.)
4. Preheat oven to 325ºF. Use a serrated knife to cut each loaf diagonally into 1/2-inch slices. Place slices on an ungreased cookie sheet. Bake for 8 minutes. Turn cookies over; bake for 7 to 9 minutes more or until crisp and dry. Cool.
* My recipe (pictured here) used 1 cup of chocolate chips, as opposed to 3/4 cup white + 1/2 cup chocolate. I'm not a huge fan of white chocolate when baking .. it's too sweet. Though Jeremy thinks the photos would look cool with white chocolate in them, so maybe next time. :)
I also only cooked them the 2nd time for 5 minutes on the first side and 3 on the next, only because I like them not quite so hard.
