Description:
Sorry, it's another non-diet dish. But another quick and easy appetizer for a party.

Ingredients:
1 cup chopped cooked chicken
1/2 cup mayonnaise (I prefer Miracle Whip ... love that "tangy zip")
1 12-oz. package frozen spinach
1 12-oz container sour cream
1 pkg spring onion dip mix (Knorr is the best, I think)

Directions:
Cook chicken while mixing the other ingredients. If you're in a hurry, you can use canned chicken meat, which is already cooked and broken into chunks, but it tastes much better iwth fresh-cooked chicken. While it's cooking, mix mayonnaise, sour cream and spring onion mix together, adding in the spinach (thawed) only when the other mixture is completely blended. Try to squeeze as much water out of the spinach as possible, prior to adding to the mixture. Finally, add your chicken, mix well and transfer mixture to a glass pyrex container. I use an 8.25" round dish. Cook at 350ยบ for about 1/2 hour. Serve with sliced bread (I think sweet French is the best) or crackers (Ritz works well). While you can eat this warm, I actually prefer it lukewarm or chilled, so it makes a great leftover or an appetizer at a party where it may not stay warm.

Variation: Throw a little finely grated mozzarella and parmesan into the mixture and also sprinkle some on top for an extra little zing.
