Description: Mmmm ... a new recipe for us, and it is excellent! The original recipe only called for "smoked sausage", but we used Andouille to add a little zip, and boy, did it! This is an excellent, super-easy dish to make.
Ingredients: 2 14-oz cans reduced sodium chicken broth (because the sausage is so salty, it really is advisable to stick with reduced-sodium) 1 1/2 cups water 1 cup brown lentils, rinsed and drained 1 cup sliced celery (2 stalks) 1 cup sliced carrot (2 medium) 1/2 cup chopped onion (1 medium) 1 teaspon snipped fresh thyme or 1/2 teaspoon dried thyme, crushed 1/8 teaspoon cayenne pepper (I threw a little extra in - we like it spicy) 2 cloves garlic, minced 6 oz. cooked smoked sausage links, quartered lengthwise and sliced
Directions: In a large saucepan (we used a small pot) combine broth, water, lentils, celery, carrot, onion, dried thyme (if using), cayenne pepper and garlic. Bring to a boil and then reduce heat and simmer, covered, for 20-25 minutes or until vegetables and lentils are tender. Stir in sausage and, if using, fresh thyme. Heat through.
