"Laughter is the language of the Gods." – Buddhist saying "I think we can't go around measuring our goodness by what we don't do; by what we deny ourselves; what we resist and who we exclude. I think we've got to measure goodness by what we embrace; what we create; and who we include." -Pére Henri,Chocolat "Hear our humble prayer ... for our friend the animals, especially for animals who are suffering; ... for any that are hunted or lost or deserted or frightened or hungry; ... and for those who deal with them we ask a heart of compassion and gentle hands and kindly words. Make us, ourselves, to be true friends to animals and so to share the blessings of the merciful." -Albert Schweitzer | My Thoughts ... | Jul 18, 2008 |

Actual name: Cream Cheese-Filled Cantaloupe Bowls with Watermelon SauceLight cream cheese and a fresh-tasting raspberry-and-watermelon sauce turn ordinary cantaloupe into a treat. This is a recipe taken from the Summer 2008 issue of Diabetic Living. It is definitely a different flavor. It's one of those where on the first bite, I wasn't sure I liked it, but the flavors really blend together well. A little bit of the cream cheese mixture goes a long way, so you might actually be able to stretch the dessert out to serve more. Extra tidbit of info: According to the magazine, cantaloupe is the most nutrient-rich type of common melon. | Reviews | |
